Tomorrow is Shrove Tuesday so at the weekend we “practiced” our pancakes to make sure the recipe would be ok for tomorrow!
This year instead of thin pancakes with lemon and sugar we decided to go with my favourite theme of the moment and try banana and chocolate chip American pancakes!
We used this recipe and they turned out perfectly. Possibly the best pancakes we’ve ever made at home! They were light and fluffy and had a really nice flavour. I actually didn’t add any maple syrup to mine as they were tasty and soft enough without it. Next time we’ll only make half the recipe as we hadn’t realised it would make so many and they are very filling. We also need to work on the shape of our pancakes, as the batter is very thick, they came out less like circles more like splodges but that’s part of their charm! Looking forward to our tea on Tuesday already!
