Maybe you thought I’d have moved on by now but nope, we are still firmly in the banana groove! I finally bought a loaf tin so banana bread is now firmly on the menu.
First it was Peanut butter banana bread with maple glaze which was delicious. The icing made it feel more like a special cake than “just” banana bread. It did take 75 minutes to cook in my oven though, which is worth remembering in future, not a quick cake!
Next it was straight up Banana bread. Sugaring the pan didn’t really work for me, there was no sugar crunch just quite a dark, but luckily not burnt crust, I’ll skip this step next time. The idea was to slice it up and put it in the freezer so we are ready for any cake based emergencies! We may have both eaten a couple of pieces but it finally made it into the freezer. Hope it tastes as good when it comes out!
So now we’ve had banana bread, muffins, and pancakes. I wonder if there are any more banana related recipes that in missing out on?!
