Last year we made banana chocolate chip pancakes, which is still our favourite breakfast recipe. Yesterday, we were less prepared and didn’t have any ripe bananas on hand to whip up a batch so we scoured the internet for something new and I remembered a gingerbread pancake recipe I had found a few months ago. Luckily, we had all of the ingredients and Chris set to work to create some very large but very fluffy pancakes. They were pretty good with a mild gingerbread flavour. Next time we would double the amount of spices as we like a stronger ginger taste and maybe even add chopped stem ginger if we had some in the cupboard. Certainly worth a try if you’re looking for a new recipe, very easy, cooked nicely and were a very tasty treat for pancake day!
